Blue Cookies, Who Knew?

So today, Emma and one of her friends made blue cookies! I'm not sure if I've ever made blue sugar cookies before. For some reason it just seems strange and uber interesting and a bit exciting to me. So what did I do, dear reader? I took a picture or two, of course! :) The cookies look a little green, but we covered them with blue icing [I did help with this part!] and they tasted great! The cookie dough was the best part! :)
[Emma's friend couldn't stay to see the cookies come to be baked, so that's why Emma's the only one in the photos]


Here's the recipe to the sugar cookies:

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • [We also added a few drops of blue food coloring; optional]

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
  3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

And for the icing:
  • A little over a cup of powdered sugar
  • Some milk
  • a teaspoon of vanilla
  • [we added some almond extract towards the second half of our cookies which made it way better, so I'm sure it can be substituted for the vanilla. It's all a matter of preference] :)
  • Two drops of blue food coloring
